My Mama’s Ultimate Chocolate Cake

My mum’s chocolate cake has been around since as far back as I can remember and its by far thee most delicious chocolate cake I have ever and probably will ever eat. I feel like being able to bake a delicious chocolate cake is a baking staple and so I asked my mum if I could share her “secret” recipe with you! This recipe may seem a bit odd due to the lack of butter and the use of margarine – which even I was skeptical of, but I cannot explain to you how dark, decedent and generally delicious this cake is! You just have to give it a try!

Ingredients:

Cake:

  • 2 cups of sugar
  • 2 eggs
  • 250g of margarine (frozen)
  • 1 cup of milk
  • 2.5 cups of flour
  • 1/2 cup of cocoa
  • 1/2 tsp of salt
  • 3 tsp baking powder
  • 1 tsp bicarb
  • 1 cup of boiling water

Icing:

  • 4 Tbs Margarine
  • 1/2 cup and 4 Tbs Cocoa
  • 4 Tbs Milk
  • 1. 1/3 cup Icing Sugar
  • Pinch of salt
  • Shot of black coffee

Appliances and tools needed:

  • 3 medium glass bowls
  • Electric beaters
  • A sieve
  • 2 medium cake  tins

Method:

Cake:

  1. Beat 2 cups of sugar and  2 eggs until its light in color and fluffy.
  2. In a glass bowl microwave the 250g of margarine until its melted but not boiling hot. Once thats done add in the 1 cup of milk into the same bowl.
  3. Into the fluffy egg and sugar mixture sift in 2.5 cups of flour, 1/2 cup of coco, 1/2 tsp of salt and 3 tsp baking powder.
  4. Add the margarine and milk mixture into the bowl with the egg, sugar and dry ingredients, along with 1 cup of boiling water and 1tsp bicarb.
  5. Beat this mixture for around 1 minute, so you’re confident everything has been incorporated!
  6. Pop your batter into two lined and greased cake tins and bake at 175ºC for 42 (I know, weirdly specific) minutes!

Icing:

  1. Add the 4 Tbs Margarine and 1/2 cup and 4 Tbs coco into a glass bowl and microwave it until the marg. is melted.
  2. Add the 4 Tbs milk, 1. 1/3 cup Icing sugar, a pinch of salt and the shot of espresso and beat until silky, dark and sultry!
  3. Only ice your cake once its completely cooled!
